We have experimented to find the best recipe. We need confidence in the quality of the ingredients to support our recipe. Therefore, we use people who we have known for many years to supply Polish flour and fresh eggs.
Dried using unique methodology
We found that the drying process is critical to the end result. Consequently you cannot rush this part as it will directly impact the texture and taste. We have developed a unique process for drying: it involves several stages, it is slow, at a low temperature and in a bespoke purpose built environment.
Care and attention given to every packet
We prepare small batches to ensure that we maintain a consistent level of quality. Whilst we do use machines every packet of pasta goes through many pairs of hands – therefore, at each stage we can check the quality and ensure that we achieve our high standards.
