Our products

We produce four different Makaron kujawski products.  You can get each in 400g packets, made from the same special recipe.  The only difference is the way the shape is created.  We roll the pasta dough for nitka,  wstążka and łazanka before it is cut to size.  We use bronze dies to cut our świderek pasta.

The rest of the process is the same – well, except for the processes we use for drying … but, that would be giving too much away.

It is hard to say what the most important stage is; as each stage brings something different to the final product.  However, it is no exaggeration to say that the drying process is very difficult to master, and is particularly difficult to get right if you want an end product that makes dried pasta resemble fresh pasta.

Pasta is impacted by many variables – including the gluten quantity in the flour and the moisture in the air linked to the weather, for example.  Preparing small batches of dough, having a hands-on process and taking our time to get the right quality means that we control for these variables.
